
1 egg
Pinch salt
Pinch black pepper
1 tbsp green onion, sliced
1 tbsp water
1 small submarine bun, whole grain
sliced horizontally
2 sliced tomato
1 tbsp fat free italian dressing
1 slice lean ham cut in half
1 slice fat free Monterey Jack cheese cut in half
In a small bowl, lightly wisk egg, salt, black pepper, green onion and water. Pour into a small nonstick skillet coated with cooking spray. Cover and cook over medium heat for 2 minutes or until top is set.
Set cooked egg aside on a plate. Slice in half to form 2 half moons.
Lightly toast cut side of bun under the broiler.
Spread tomato mixture on bun to cover both halves, then add egg, ham and cheese slice in layers. Close bun and secure with toothpicks.
Place bun on a baking sheet coated with cooking spray. Cover loosely with aluminum foil. Bake at 350·F(180·)C for 10 minutes.
